In America, the great melting pot, cuisine pots are full of borrowings. Mexican specialties took on a new identity when they got to Texas; Chinese-American cookers in the 19th-century took cheer from their motherland to fashion dishes applicable to their new home. Ours is cookery of adaption, open to the world.


Hotcakes aren’t just made in the USA, but a mound of soft and airy bones – frequently outgunned with maple mush, a clump of flannel, and bacon – are distinctively American.

Biscuits and gravy

The British can call their eyefuls biscuits if they like, but then in the good ol’ USA, we know the one true biscuit is hot, savory, and ideal for mopping up gravy. Spaghetti and meatballs

Funk and Waffles

Southern-fried funk and mush-soaked hotcakes would go together like chuck and butter. Americans migrating from the South to the North following the Civil War, funk and hotcakes were soon being served up in Harlem jazz clubs. Now, of course, they’re enjoyed across the country.

Funk-fried steak

Funk-fried steak doesn’t contain any funk at each, but a thin tenderized cut of steak. It started with Austrian and German migrants in Texas trying to recreate their cherished Wiener Schnitzel without veal. Rather they chose beef, which was generous in the region, breading and frying it like Southern funk, hence the name.


Cornbread is chief of Southern cuisine and is enjoyed south of the Mason-Dixon line with just about anything. Of course, it’s also made in a variety of ways and is protean enough to be seasoned with anything from rubbish to sauces to jalapeño.
